In a large mixing bowl, add 1 stick (1/2 cup) softened butter and 1 cup white granulated sugar.
Using an electric hand mixer, beat the butter and sugar together until light in color.
Add 1 cup of sour cream to the butter and sugar mixture.
Crack 1 egg into a small bowl to check for shells, then add it to the mixture.
Add 2 teaspoons of vanilla extract and beat until smooth and combined.
In a medium-sized bowl, add 2 cups of all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, and 1/4 teaspoon salt. Whisk together until aerated.
Gradually add some of the flour mixture to the batter, incorporating it with the hand mixer.
Add the remaining flour mixture and mix until just combined, being careful not to overmix.
In a clean medium bowl, add 1/2 cup packed brown sugar and 1/4 cup all-purpose flour for the streusel.
Add 1/4 cup cold butter cut into pieces and 1 teaspoon ground cinnamon to the brown sugar mixture.
Using a fork, mash the mixture together until it forms a coarse crumb.
Grease a 9x9 baking pan using a butter wrapper or 1 teaspoon of butter, ensuring to cover the corners and sides.
Place half of the batter into the bottom of the greased pan and smooth it out evenly with an offset spatula.
Sprinkle half of the streusel mixture evenly over the batter.
Dollop the remaining batter on top and spread it out evenly.
Sprinkle the rest of the streusel mixture on top of the batter.
Bake in a preheated 350°F oven for 35 to 40 minutes until golden brown on top.
Check doneness by inserting a toothpick into the center; if it comes out clean or with crumbs, it's done. If it has batter on it, return it to the oven for a few more minutes.
Allow to cool slightly before cutting into the cake.
