Nutritional yeast adds a cheesy flavor with fewer calories.
Preheat oven to 425°F (220°C).
Cut lemons in half and pour olive oil into a baking dish.
Place lemons cut side down in the baking dish and sprinkle with salt.
Put the baking dish into the oven and roast until lemons are soft and golden brown, about 45 minutes.
Cut the top off the head of garlic to expose the cloves and drizzle with olive oil.
Place the garlic on the same baking sheet as the lemons in the oven.
Set a timer for 25 minutes; after 25 minutes, prepare the broccoli.
Wash the broccoli and cut the florets off, splitting larger pieces in half.
In a large bowl, toss the broccoli florets with olive oil, salt, and black pepper.
Remove the hot baking tray from the oven and place the broccoli cut side down in a single layer on the tray.
Return the baking tray to the oven and roast the broccoli for about 20 minutes.
After 25 minutes, check the lemons; they should be golden brown and soft, with juices in the dish.
After 20 minutes, check the broccoli; it should be golden and tender, and the garlic should be caramelized and soft.
Let the garlic cool for a few minutes, then squeeze the cloves out into a bowl.
Squeeze the roasted lemon pulp into the bowl with the garlic, removing any seeds.
Taste the mixture and adjust with more lemon, salt, pepper, and olive oil as needed.
If desired, add honey to balance the acidity.
If using parsley, add it to the dressing.
Set aside some dressing; you may not need all of it for the broccoli.
Toss the roasted broccoli gently with the dressing in the bowl.
