Nutritional yeast adds a cheesy flavor with fewer calories.
Cut broccoli crowns into wedges, making four pieces for smaller crowns and six for larger ones.
Add 5 tablespoons of olive oil to a 12-inch non-stick skillet.
Add a couple tablespoons of water to the skillet.
Season broccoli with 3/4 teaspoon kosher salt and arrange in the cold skillet.
Cover the skillet and place over high heat for about 4 minutes to create steam.
Prepare the topping by combining 2 tablespoons toasted sunflower seeds, 1 tablespoon nutritional yeast, 1/2 teaspoon grated lemon zest, 1/4 teaspoon smoked paprika, and 1/4 teaspoon kosher salt in a mortar and pestle.
Take a third of the topping mixture and sprinkle it on the bottom of the skillet to coat the broccoli.
After 4 minutes, remove the lid and press the broccoli pieces to ensure they are in contact with the skillet.
Cover and cook for an additional 4-6 minutes to achieve browning on the bottom side.
After 5 minutes, check for browning, then turn the broccoli to brown the second cut side.
Cook uncovered for another 3-5 minutes, ensuring good contact with the skillet for browning.
Transfer the broccoli to a serving platter and sprinkle with the remaining topping.
