Ingredients

  • 8 oz penne pasta
  • 1 cup goat cheese
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 1 tbsp olive oil

Instructions

  1. 1Preheat the oven to 375°F (190°C).
  2. 2Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  3. 3In a large mixing bowl, combine the goat cheese, heavy cream, Parmesan cheese, minced garlic, red pepper flakes, salt, and black pepper. Mix until smooth and creamy.
  4. 4Add the cooked pasta to the cheese mixture and stir until well coated.
  5. 5Fold in the cherry tomatoes and fresh basil, mixing gently.
  6. 6Transfer the pasta mixture to a greased baking dish and drizzle with olive oil.
  7. 7Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  8. 8Remove from the oven and let it cool for a few minutes before serving.

  • 12 oz pasta (penne or fusilli)
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 tsp red pepper flakes

  • 1/4 tsp black pepper
  • 1/2 cup grated Parmesan cheese (optional)
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, zested and juiced

Instructions

  1. 1Preheat the oven to 425°F (220°C).
  2. 2On a baking sheet, toss the broccoli and cauliflower florets with 2 tablespoons of olive oil, salt, pepper, and red pepper flakes.
  3. 3Roast the vegetables in the preheated oven for 20-25 minutes, or until they are tender and slightly browned.
  4. 4While the vegetables are roasting, cook the pasta according to package instructions until al dente. Drain and set aside.
  5. 5In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  6. 6Add the roasted broccoli and cauliflower to the skillet with the garlic, and stir to combine.
  7. 7Add the cooked pasta to the skillet and toss everything together. If desired, add the grated Parmesan cheese and lemon juice, mixing well.
  8. 8Remove from heat and stir in the lemon zest and chopped parsley before serving.
