Ingredients
- ●8 oz penne pasta
- ●1 cup goat cheese
- ●1 cup heavy cream
- ●1/2 cup grated Parmesan cheese
- ●2 cloves garlic, minced
- ●1/2 tsp red pepper flakes
- ●1/2 tsp salt
- ●1/4 tsp black pepper
- ●1 cup cherry tomatoes, halved
- ●1/4 cup fresh basil, chopped
- ●1 tbsp olive oil
Instructions
- 1Preheat the oven to 375°F (190°C).
- 2Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- 3In a large mixing bowl, combine the goat cheese, heavy cream, Parmesan cheese, minced garlic, red pepper flakes, salt, and black pepper. Mix until smooth and creamy.
- 4Add the cooked pasta to the cheese mixture and stir until well coated.
- 5Fold in the cherry tomatoes and fresh basil, mixing gently.
- 6Transfer the pasta mixture to a greased baking dish and drizzle with olive oil.
- 7Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- 8Remove from the oven and let it cool for a few minutes before serving.

- ●2 cups cauliflower florets
- ●12 oz pasta (penne or fusilli)
- ●3 tbsp olive oil
- ●4 cloves garlic, minced
- ●1/2 tsp red pepper flakes
- ●1/2 tsp salt
- ●1/4 tsp black pepper
- ●1/2 cup grated Parmesan cheese (optional)
- ●1/4 cup fresh parsley, chopped
- ●1 lemon, zested and juiced
Instructions
- 1Preheat the oven to 425°F (220°C).
- 2On a baking sheet, toss the broccoli and cauliflower florets with 2 tablespoons of olive oil, salt, pepper, and red pepper flakes.
- 3Roast the vegetables in the preheated oven for 20-25 minutes, or until they are tender and slightly browned.
- 4While the vegetables are roasting, cook the pasta according to package instructions until al dente. Drain and set aside.
- 5In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- 6Add the roasted broccoli and cauliflower to the skillet with the garlic, and stir to combine.
- 7Add the cooked pasta to the skillet and toss everything together. If desired, add the grated Parmesan cheese and lemon juice, mixing well.
- 8Remove from heat and stir in the lemon zest and chopped parsley before serving.
