Coconut oil is a healthier fat option, while margarine can be more budget-friendly.
Preheat the oven to 200°C (392°F).
In a deep bowl, combine 0.5 cup salted butter and 1 cup icing sugar, mixing with a spatula.
Add 2 cups refined flour all at once and mix until combined.
Add 1 egg yolk and knead into a soft dough without adding any water.
Cover the dough with a damp cloth and refrigerate for 10 minutes.
Roll out the dough on a floured surface to a thin sheet.
Use a cookie cutter to cut out shapes and place them on a baking plate.
Refrigerate the cut cookies for another 10 minutes.
Bake the cookies in the preheated oven for 12 minutes.
Cool the cookies for 15-20 minutes until they reach room temperature.
Prepare royal icing by whipping egg whites until foamy, then adding icing sugar and lemon juice.
Divide the royal icing into two parts, coloring one green and leaving the other white.
Fill piping bags with the royal icing and decorate the cooled cookies with the icing and star sprinkles.
