Start by making the cookie dough using a food processor.

Add 2 1/2 cups of flour, cold butter, icing sugar, 1 egg, a pinch of salt, a drop of vanilla essence, and a little bit of almond essence into the food processor.

Pulse until the mixture forms big lumps.

Tip the mixture onto a work surface and bring it together with your hands, forming a dough ball.

Chill the dough in the fridge for about 1 to 1.5 hours.

Roll out the chilled dough on a lightly floured work surface until it's about half a centimeter thick.
