Today, variations can be found globally, adapting to local tastes while maintaining the essence of this classic dish.

Take the beef out of the fridge 1 hour before cooking.
Heat the oven to 240°C (220°C fan, gas mark 9).
Mix together the rosemary, 3 tablespoons of mustard, 3 tablespoons of oil, and some seasoning.
Arrange the onions, garlic, and parsnips in the largest roasting tray.
Toss half the mustard mix through the vegetables.
Sit the beef on top of the vegetables and season well.
Rub the remaining mustard mix over the beef and roast for 15 minutes.
Meanwhile, bring a large pan of salted water to a boil.
Peel and half the potatoes, then add them to the boiling water.
Cover and simmer the potatoes for 5 minutes, then drain well.
Return the potatoes to the pan and shake to fluff them up a little.
Carefully spoon the potatoes into hot fat, coating them well, then season.
Reduce the oven temperature to 190°C (170°C fan, gas mark 5) and place the potatoes on the shelf below the beef.
Continue to roast for 1 hour and 10 minutes, turning the vegetables and potatoes once or twice.
About 15 minutes before the end of cooking time, drizzle the vegetables with honey.
Remove the beef from the tray and lightly cover it to rest for 30 minutes.
Return the vegetables and potatoes to the oven to keep warm or continue roasting if you'd like them crispier.
Steam the broccoli for 3 to 5 minutes or until tender.
Mash together the butter, lemon zest, and lemon juice, and season before tossing through the hot broccoli.
Heat the gravy according to the pack instructions, then thinly slice the beef and serve with the parsnips, potatoes, broccoli, and gravy.
