Take the beef out of the fridge 1 hour before cooking.

Heat the oven to 240°C (220°C fan, gas mark 9).

Mix together the rosemary, 3 tablespoons of mustard, 3 tablespoons of oil, and some seasoning.

Mash together the butter, lemon zest, and lemon juice, and season before tossing through the hot broccoli.
