Marinate the pork chops in the mixture.

Heat olive oil in a hot pan.

Sear the pork chops in the pan, coloring both sides.

Tilt the pan and baste the pork chops with the oil.

Transfer the pan to the oven and cook for 8 to 10 minutes at 200°C.

Peel and chop sweet potatoes.

Boil sweet potatoes in chicken stock until tender, then drain.

In a hot pan, heat olive oil and add chopped garlic, seasoning lightly.

Caramelize the garlic to enhance the sweetness of the potatoes.

Crush the sweet potatoes and mix in fresh coriander and sage.
