Measure 1 cup of steel cut oats and add them to the Instant Pot.
Pour 2 cups of water over the oats.
For savory oats, add 1 teaspoon of sea salt for every cup of oats.
Turn the valve to the sealing position.
Set the Instant Pot to 3 minutes on high pressure.
Wait for the pressure cooker to finish cooking and allow for a full natural pressure release.
Once the safety pin drops, open the pot to reveal the creamy savory oats.
Serve a couple of spoonfuls into a bowl and top with your favorite toppings.
For savory topping, preheat a large pan over medium heat and add a knob of butter.
Once melted, add 1 tablespoon of sliced scallions, 2 sliced mushrooms, and 1/4 cup diced red bell pepper.
Sauté until the mushrooms become golden brown, then add a small handful of baby spinach and season with sea salt.
Continue sautéing for another 30 seconds, then remove the veggies from the pan.
Drizzle a little avocado oil into the pan and crack an egg into it.
Season the egg with sea salt and pepper, frying until desired doneness.
Top the oats with the sautéed veggies and fried egg.
For another savory topping, sauté 3 half baby bok choy with 1 chopped clove of garlic, 1/2 teaspoon grated ginger, and sea salt.
Add this to a bowl of oats with a hard-boiled egg and sprinkle with chopped peanuts.
For a third savory topping, add oven roasted asparagus to your oats and sprinkle with toasted pine nuts.
For a fourth savory topping, prepare a salted pan-fried egg with chopped cherry tomatoes, red onion, jalapeno, cilantro, lime juice, and black pepper.
For sweet oats, repeat the same initial steps: 1 cup steel cut oats and 2 cups water, omitting the salt.
Seal the lid and set the Instant Pot to 3 minutes, then wait for it to cook and release pressure naturally.
Once cooked, add 1/2 cup of any kind of milk and 1/4 cup of maple syrup for every cup of oats.
Pour the creamy oats into a bowl and prepare to add toppings.
For fall and winter toppings, use seasonal fruits like kiwi, passion fruit, unsweetened shredded coconut, clementine, pomegranate seeds, hemp seeds, apple, pecan, and cinnamon, or banana with unsweetened peanut butter and shaved dark chocolate.
For summer toppings, suggested fruits include peach, blueberry, chopped pecan, strawberry, hazelnut, dark chocolate, cherry, almond butter, and raspberry with chia and shaved white chocolate.
