2 pods cardamom
1 bay leaf
1 inch cinnamon
2 cloves
1 tsp kashmiri red chili powder
½ tsp turmeric
¾ tsp coriander powder
¼ tsp cumin powder
1 tsp salt
¼ cup cream (malai)
½ cup water
1 tsp kasuri methi (crushed)
¼ tsp garam masala

In a large kadai, heat 1 tbsp butter and 2 tbsp oil, sautéing 1 tsp cumin, 2 pods cardamom, 1 bay leaf, 1 inch cinnamon, and 2 cloves until aromatic.

Add 1 tsp kashmiri red chili powder, ½ tsp turmeric, ¾ tsp coriander powder, and ¼ tsp cumin powder, sautéing until fragrant.

Add the prepared onion-tomato puree and 1 tsp salt, mixing well.

Cover and cook until the mixture thickens and oil separates from the sides.

Add ¼ cup cream and mix on low flame until combined.

Adjust consistency with ½ cup water, bringing the curry to a boil.
