Walnuts provide healthy fats and are more affordable.

Boil 1 pound of orzo pasta until al dente; drain and rinse with cold water to cool.

Set the cooled pasta aside or refrigerate to chill.

Slice up a can of olives.

Use 1 pound of baby spinach; add more or less according to preference.

Mix together 16 ounces of basil pesto with 1/4 cup of mayonnaise for creaminess.

Add 1 cup of julienned sun-dried tomatoes along with some of the oil they are packed in.

Combine the cooked orzo pasta with the spinach, olives, and the pesto-mayo mixture; stir to combine.

Transfer to a serving bowl and optionally garnish with freshly grated parmesan cheese.
