1

Preheat the oven to 350°F.

2

Cut the cherry tomatoes in half and add them to a pan.

3

Add 1 can of drained diced tomatoes to the pan with the cherry tomatoes.

4

Add 1 teaspoon of olive oil, salt, pepper, and dried oregano to the pan.

5

Roast the tomatoes in the oven for about 1.5 hours.

6

While the tomatoes roast, dice 2 stalks of celery, 2 medium carrots, and 1/2 white onion.

7

In a separate pot, add the diced veggies and 1/4 cup of water; sauté until translucent.

8

Season the veggies with salt, pepper, Italian seasoning, and chili flakes.

9

Add 2 red wine ice cubes (or 1/4 cup of fresh red wine) to deglaze the pan.

10

Once the roasted tomatoes are done, squeeze the roasted garlic out of its skin and mash it with a fork.

11

Add the sautéed veggies to the mashed roasted tomatoes and stir to combine.

12

Cook your choice of pasta (recommended: angel hair) according to package instructions.

13

Toss the cooked pasta with the sauce using kitchen tongs to ensure even coating.
