Boil about an inch and a half of water in a large pot.

Add fresh plum tomatoes to the boiling water and let them boil for 10 to 15 minutes.

Add chopped small red onion and minced store-bought garlic to the pot with olive oil and turn the heat down to 4 to simmer until the onions are translucent.

Process the boiled tomatoes through a tomato processing machine to separate the skins and seeds from the sauce.

Add about a tablespoon of sugar to cut the acidity of the tomatoes.

Add about a teaspoon of salt, a little more pepper, about 20 shakes of oregano, and about four shakes of celery salt to the sauce.

Stir the sauce well and heat it to boiling uncovered for about 10 minutes.
