Preheat the oven to 180° Centigrade (Gas Mark 4).

Place the chilies on a roasting tray and roast them for 10 minutes.

Remove the chilies from the oven and allow them to cool down.

Roughly chop the cooled chilies into small pieces.

In a saucepan, combine the olive oil, red wine vinegar, garlic, paprika, oregano, and the roasted chilies (including their seeds).

Sprinkle in some salt and heat the mixture over medium heat, letting it simmer for 2 to 3 minutes.

Leave the sauce to cool for a few minutes, then pour it into a blender or food processor and blend it into a puree.

Place the chicken in a large bowl and pour the sauce over it, using your hands to ensure the chicken is fully covered.

Seal the chicken with cling film and leave it in the fridge to marinate for about 1 hour.

Remove the marinated chicken from the fridge, take off the cling film, and transfer it into a large baking tray.

Roast the chicken for 1 to 1.5 hours, depending on its size, until cooked through, basting it occasionally with the remaining sauce.

Check the chicken for doneness by inserting a knife into the thickest part of the thigh; if no liquid comes out, it is thoroughly cooked.
