  • 1/2 lb sushi-grade tuna, diced
  • 2 tbsp mayonnaise
  • 1 tbsp sriracha
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • Soy sauce, for serving
  • Pickled ginger, for serving
  • Wasabi, for serving

Instructions

  1. 1Rinse the sushi rice under cold water until the water runs clear.
  2. 2In a rice cooker, combine the rinsed rice and water. Cook according to the rice cooker instructions.
  3. 3Once cooked, transfer the rice to a large bowl. Mix rice vinegar, sugar, and salt in a small bowl until dissolved, then fold into the rice. Let it cool to room temperature.
  4. 4In a separate bowl, mix the diced tuna, mayonnaise, and sriracha to create the spicy tuna filling.
  5. 5Place a bamboo sushi mat on a flat surface and lay a sheet of nori on top, shiny side down.
  6. 6Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.
  7. 7In the center of the rice, place a line of the spicy tuna mixture, avocado slices, and cucumber strips.
  8. 8Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to keep the roll tight.
  9. 9Once rolled, use a sharp knife to slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.
  10. 10Serve the spicy tuna rolls with soy sauce, pickled ginger, and wasabi.
