Originating in Venice, Italy, Beef Carpaccio was created in the 1950s and named after the painter Vittore Carpaccio, known for his vibrant reds. Traditionally served as an appetizer, it highlights the quality of raw beef, complemented by simple, fresh ingredients. Today, variations abound globally, with some incorporating different meats or toppings, yet the essence of this classic remains cherished.

Trim the beef fillet to remove any fat or sinew.
Chop about 1 tablespoon of thyme leaves finely.
Lay a good pinch of black pepper on the cutting board, roughly the length of the beef.
Roll the beef in the thyme and pepper mixture to add flavor.
Grill the beef fillet on each side for about 30-45 seconds until nice markings appear.
Turn the beef to get crust on all sides; do not worry about grilling the ends.
Let the grilled beef rest for about 10 minutes to cool.
Slice the beef as thinly as possible, about six slices per plate.
Flatten each slice to make it as thin as possible before placing it on the plate.
Season the beef slices with a pinch of salt and a small pinch of pepper.
Squeeze lemon juice over the beef slices.
Take a small handful of rocket (about 100 grams), season with a tiny bit of salt and pepper, and dress with lemon and olive oil.
Drape the dressed rocket over the beef.
Shave pieces of Parmesan cheese on top of the rocket and beef.
Drizzle a little olive oil on top before serving.
