Afghan Bolani

500g All purpose Flour
2tsp Salt
2tbsp Oil or Ghee
water as needed
750g Potatoes (boiled peeled and grated)
1 medium size Onion (chopped)
1/2cup Green onions
1/2cup Parsley (chopped)
1 1/2tsp Salt
1tbsp Chili flakes
1tsp Cumin powder
1tsp Coriander powder
1/2tsp Black pepper powder
1/2tsp Turmeric powder
2tbsp Olive oil
3-4 Red & Green chillies (chopped)
4 cloves of Garlic (chopped)
oil or ghee as needed for paratha

Boil, peel, and grate the potatoes.

In a bowl, combine the flour, salt, and oil or ghee. Gradually add water to form a dough.

In another bowl, mix the grated potatoes, chopped onion, green onions, parsley, chili flakes, cumin powder, coriander powder, black pepper powder, turmeric powder, chopped chillies, and garlic to create the filling.

Divide the dough into small balls and roll each ball into a flat circle.

Place a portion of the filling on one half of the circle, fold it over, and seal the edges.

Heat oil or ghee in a pan and cook each bolani until golden brown on both sides.
