Grate 10 medium-sized potatoes using a fine grater.
Grate 2 onions, adding half to the dough and the other half to the meat filling.
Mix the grated onions with the meat, adding salt and black pepper, and set aside to marinate.
Squeeze out excess liquid from the grated potatoes using a cloth or non-woven towels.
Let the liquid sit for 10 minutes to allow the starch to settle, then pour off the liquid and keep the starch.
Combine the grated potatoes with the starch, salt, an egg, and flour, adjusting the flour as needed to achieve a dry dough.
Take a piece of dough, flatten it, place a ball of meat filling in the center, and wrap the dough around it to form dumplings.
Boil water and carefully drop the dumplings in, cooking for 20 minutes until done.
