Imli Ki Chutney

Soak tamarind pulp in hot water for about 30 minutes, preferably overnight.
Soak jaggery in water for 15 minutes to soften it.
Strain the tamarind to remove the seeds and fibers.
In a saucepan, combine the strained tamarind pulp, jaggery, and water.
Cook over medium to low heat for 5-7 minutes until the jaggery dissolves.
Add cumin seeds, black salt, red chili flakes, and regular salt to taste.
Simmer for about 6 minutes.
Blend the mixture in a blender until smooth, adjusting with boiling water if it becomes too thick.
Optionally, add 1 tablespoon of sesame seeds.
Transfer to a clean, dry container and refrigerate for 2-3 months.
