Soak tamarind pulp in warm water for 15 minutes until softened.
Mash the tamarind to extract the pulp and strain to remove fibers.
Combine tamarind pulp, jaggery, and water in a saucepan over medium heat.
Cook until jaggery dissolves, about 5-7 minutes.
Add cumin seeds, black salt, red chili powder, ginger, and coriander powder.
Simmer for another 5 minutes to meld the flavors.
Remove from heat and let cool slightly.
Blend the mixture until smooth, adjusting consistency with water if needed.
Stir in lemon juice and salt to taste.
Transfer to a serving bowl and refrigerate until chilled.
