Tuna Red Pesto Pasta

250 g (8.8 oz) pasta
1 tablespoon olive oil
1 medium red onion, finely diced
2 large garlic cloves, finely chopped
100 g (1/2 cup) red pesto
75 g (1/2 cup) capers
75 g (1/2 cup) Kalamata olives
2 x 145 g (5 oz) canned tuna chunks, drained
Handful fresh parsley (optional)
Salt and freshly ground black pepper to taste

Bring a large pot of water to a boil and cook the pasta al dente according to the directions on the package. Reserve 1-2 cups of pasta water before draining.

Meanwhile, heat the olive oil in a large frying pan and cook the onions for 2-3 minutes until they soften a bit.

Add the garlic and continue to cook for another minute until fragrant. Next, stir in the red pesto and 1/2 cup of pasta water and allow the sauce to bubble for a minute.

Stir in the capers, Kalamata olives and tuna, then add the cooked pasta and stir to combine.

Add the parsley if using, season to taste and serve.
