Mushroom Pasta

Boil water for pasta.

Clean mushrooms with a damp paper towel.

Dice 2 to 3 shallots.

Heat a large saucepan over low to medium heat and add 1 tablespoon of olive oil and 2 tablespoons of salted butter.

Add shallots to the saucepan and cook until soft.

Slice mushrooms into 1/3 inch pieces and add to the saucepan with a pinch of salt.

Cook mushrooms until softened.

Add 4 minced garlic cloves and a pinch of red pepper flakes to the mushrooms.

Add a splash of white wine to the mushroom mixture.

Cook pasta in boiling salted water until al dente, about 8-10 minutes depending on the pasta type.

Transfer pasta directly from the pot to the mushroom mixture without draining.

Add ladles of pasta water to the mushroom mixture.

Grate 1 to 1.5 cups of Parmesan cheese into the pasta and stir until creamy, adding more pasta water as needed.

Add a pinch of black pepper and chopped fresh parsley and basil to the pasta.
