Peel and cut 2 cups of tart apples into thin slices.
In a bowl, mix the apples with 1/4 cup light brown sugar, 1/3 cup crushed toffee bits, and 1/4 teaspoon cinnamon. Stir and let the apples sit.
Flour the work surface and roll out the puff pastry from the fridge into a square.
Cut the rolled puff pastry into two rectangles: one 10 inches long and 4 inches wide for the bottom, and one 10 inches long and 4.5 inches wide for the top.
Trim the edges of the puff pastry for precise cuts.
Brush the entire base rectangle with egg wash to help the other pieces stick.
Build a frame with the puff pastry to hold in the apple filling.
Drop the apple filling into the frame, keeping it within the pastry edges, and sprinkle with the remaining toffee bits.
Add the top layer of puff pastry, making slits in it to let steam escape without cutting through the pastry.
Stretch the top pastry over the apple filling and press the edges to seal.
Brush the top with egg wash and sprinkle with turbinado sugar.
Preheat the oven to 400°F (204°C).
Bake the strudel for 10 minutes, then reduce the oven temperature to 375°F (190°C) and bake for an additional 20-25 minutes until bubbling juices are visible and the pastry is golden brown.
Let the strudel cool slightly before slicing.
