Prepare the sheep's head by burning the skin and fleece, and removing the brain.

Salt the sheep's head and optionally smoke it before drying.

Place bird sticks or small potatoes at the bottom of a large pot.

Add a small amount of water to the pot and place the sheep's head inside.

Cook the dish by steaming the head, or alternatively boil it over low heat for three hours.

After three hours, remove the head from the pot and place it on a plate.

Cut the head to find edible parts: make cuts from the ear down along the cheek, remove the skin, and pull out the jaw.

Remove the meat from the jaw and cheek, cut off the tip of the tongue, and remove the skin from the tongue.

Cut off the ear and take out the meat around it, then cut off the meat from the front of the head, removing the skin and nose.
