Soak wood chips in water for 30 minutes before grilling.

Place the pork shoulder on the grill away from direct heat.
Add soaked wood chips to the coals or in a smoker box.
Cover the grill and cook the pork for 4-6 hours, basting with barbecue sauce occasionally.
Check the internal temperature until it reaches 195°F for tender meat.
Remove the pork from the grill and let it rest for 30 minutes.
Shred the pork using two forks.
Serve the shredded pork on buns with coleslaw, pickles, and onions.
Drizzle additional barbecue sauce on top if desired.
