Introduce the recipe and ingredients.
Add 4 cups of self-raising flour to a large mixing bowl.
Add water to the flour, mixing with hands to achieve a desired consistency (not too watery, not too thick).
Add 2 cups of sugar to the mixture.
Add 100 g of butter and mix everything together.
Crack in 2 eggs, mixing well after each addition.
Add 1 teaspoon of baking powder and 2 teaspoons of vanilla extract, then mix again.
Chop fresh mint and add it to the mixture.
Gradually add 2 cups of millet flour while mixing.
If the mixture becomes too thick, add milk as needed to achieve a smooth consistency.
Refrigerate the batter for 10-30 minutes to let it settle.
Heat oil in a skillet until hot.
Give the batter a final mix before frying.
Pour the batter into the hot oil to fry the pancakes, ensuring they are nicely browned before removing them from the skillet.
Serve the pancakes hot, optionally with ginger and sorrel drinks.
