Originating in the 19th century, this hearty pie was a staple for working-class families, showcasing the use of inexpensive cuts of meat. Today, it remains a beloved comfort food, often served with mashed potatoes and peas, and has inspired variations around the world, including vegetarian adaptations.

Introduce cow kidney and explain its unique shape and rarity.
Cut the kidney in half and remove the white fat and excess muscle.
Rinse the cut kidney with running water and soak in water for 30 minutes.
After 30 minutes, take the kidney out and cut it into small pieces.
Soak the cut kidney in sake to remove the odor.
Cut 200 grams of beef into small pieces.
Chop one onion and five mushrooms, and a little bit of thyme.
Put butter in a pan, add beef and 100 grams of kidney, and fry well.
Once cooked, remove the beef and kidney from the pan.
In the same pan, add more butter and fry the chopped onion and mushrooms until tender.
Put the beef and kidney back in the pan and fry together.
Add 300cc of soup stock, 1 teaspoon of worcestershire sauce, 1 teaspoon of tomato paste, and thyme, then mix well.
Sprinkle salt and pepper to taste, and thicken the mixture with flour.
Put puff pastry in the mold and cut off the excess.
Fill the mold with the pie filling and cover with more puff pastry.
Apply egg wash on the surface of the pie.
Bake the pie for about 30 minutes.
Remove the pie from the mold and serve.
