Crab or shrimp can provide a similar taste at a lower cost.
Clean and wash the lobster under cold running water using lime and vinegar, then pat dry.
Season the lobster with paprika, fish seasoning, black pepper, and seasoned salt, rubbing the seasoning all over the lobster.
Melt butter in a pot on the stove.
Add chopped onion, scallion, thyme, scotch bonnet pepper, garlic, and tomato to the melted butter, and combine well.
Turn the stove on low to medium heat and let the mixture cook for about a minute.
Add jerk seasoning to the pot and combine well, being careful not to add too much.
Mix coconut milk powder with water and add it to the pot, then add more black pepper and paprika.
Allow the coconut milk to cook for at least 5 minutes before adding the lobster.
Add the seasoned lobster to the pot and pour some of the sauce over it, ensuring the stove remains on low to medium heat.
Cover the pot and let it cook for roughly 20 minutes, occasionally pouring sauce over the lobster to keep it moist.
