Spice Rub Roasted Pork Tenderloin

Preheat the oven to 425°F.
Take two pieces of pork tenderloin out of the cryovac packaging and put on gloves.
Pat the pork tenderloin dry with paper towels.
Trim the silver skin off the pork tenderloin using a knife.
Rub olive oil on all sides of the pork tenderloin.
Sprinkle salt and black pepper on the pork tenderloin.
Dust the spice rub on top of the pork tenderloin, coating it well on both sides.
Let the pork tenderloin rest for about 15 minutes.
Heat a heavy cast iron skillet and start searing the pork tenderloin until browned on all sides.
Prepare vegetables: chop potatoes, bell peppers, carrots, onions, ginger, and garlic.
Add olive oil to the skillet, then add onions and sauté until slightly softened.
Add garlic, ginger, and cilantro stems to the onions, cooking briefly.
Add the chopped bell peppers, carrots, and potatoes to the skillet along with cherry tomatoes.
Season the vegetables with salt, black pepper, and a pinch of red pepper flakes.
Cover the skillet and let the vegetables steam.
Check the pork tenderloin to ensure it is cooked to medium rare, then remove from heat.
Deglaze the skillet with balsamic vinegar and Worcestershire sauce, scraping up the fond.
Add the deglazed mixture to the pot with the vegetables and stir to combine.
Add frozen peas and squeeze in lemon juice.
Bring the vegetable mixture to a slight boil and then turn off the heat.
Slice the pork tenderloin and serve with the vegetable mixture, drizzling with olive oil and garnishing with cilantro.
