Prep the ingredients by chopping 2 chili peppers and 1 pimento pepper.
Mix 3/4 pound of ground beef with chopped chili peppers, 1/2 small onion (diced), 1 clove of garlic (grated), 1.5 teaspoons cajun seasoning, and 1.5 teaspoons brown sugar.
Divide the meat mixture into two equal parts and form into meatballs.
Cut the top off 1 large bell pepper and remove the seeds and membranes.
Cut the bell pepper into rings approximately 1.25 inches thick.
Pack the meatballs tightly into the bell pepper rings.
Season the outside of the burgers with Uncle Steve's Shake thick meat seasoning.
Chill the burgers in the fridge for 30 minutes to 1 hour.
Prepare the grill with coals and a small piece of post oak for smoke.
Cook the burgers indirectly on the grill for about 15 minutes, checking occasionally.
Make the thousand island dressing by mixing 1/4 cup ketchup, diced pickles, 1 to 1.5 tablespoons mustard, and 1/4 cup mayonnaise, adding salt and black pepper to taste.
Check the burgers, flipping them for even cooking and adding cheese on top for the last minute of cooking.
