1

Cut the chuck roast into two smaller portions, each about 1.75 pounds.

2

Season all sides of the chuck roast with beef rub.

3

Preheat the Traeger grill to 275 degrees Fahrenheit.

4

Place the chuck roast on the grill and smoke for about 1.5 hours.

5

In a 5.5 quart Dutch oven, add 32 ounces of beef broth, 1 cup of red cooking wine, and 0.5 cup of Worcestershire sauce.

6

Add chopped red onion, celery, garlic, and carrots to the Dutch oven.

7

Add 0.5 stick of butter and more beef rub to the pot.

8

Set the Dutch oven on the grill to heat up the braising liquid.

9

Once the chuck roast reaches 150-160 degrees, transfer it to the Dutch oven and cover it to braise.

10

Increase the grill temperature to 350 degrees and braise for about 2 hours until fork tender.

11

Remove the chuck roast from the grill and let it cool for 20 minutes before shredding it with forks.

12

Remove any pieces of fat from the shredded beef.

13

Drizzle some of the braising liquid over the shredded beef and add 1-2 tablespoons of barbecue sauce, mixing well.

14

Prepare the ciabatta rolls by spreading garlic butter and toasting them on the grill.

15

Assemble the sandwiches by placing shredded beef on the bottom bun, adding provolone cheese, and topping with the top bun.

16

Return the assembled sandwiches to the grill for about 10 minutes to melt the cheese.

17

Spread Blue Plate Mayo on the toasted garlic butter bread and add onions before serving.
