Preheat the oven to 180 degrees Celsius.

Boil enough water to almost cover the meat in a large roasting tin.

Add 2 bay leaves and a halved peeled onion to the water.

While the ribs are simmering, prepare the sweet and sticky sauce by combining a good amount of tomato ketchup, sweet sherry, light soy sauce, demerara sugar, and Schwartz Perfect Shake Classic Barbecue Blend in a bowl.

Stir the sauce to combine all the flavors and season to taste.

After 45 minutes, remove the ribs from the oven and turn the oven up to 200 degrees Celsius.

Transfer the ribs to a fresh baking tray and pat them dry.

Coat the ribs with the sticky sauce.
