Cut 2 cups of strawberries into small pieces and mix with 1 cup of sugar. Place in the fridge for at least 2 hours or overnight to release juices.
After chilling, boil the strawberries on low heat, stirring until they break down and thicken, adding 1/4 cup of water and juice of half a lemon.
In a bowl, mix flour, salt, baking powder, and 1 teaspoon of sugar.
Grate frozen butter into the dry ingredients and mix well.
Add 1 cup of ice cold buttermilk gradually to form a dough, folding it together on a floured surface until it comes together.
Roll out the dough to about an inch thick and cut out biscuits using a glass, yielding about 8 biscuits.
Brush the biscuits with melted butter and bake at 425°F for 15 minutes.
Prepare bacon by placing Oscar Mayer thick cut bacon on parchment paper and baking at 350°F or 400°F until crispy, adding brown sugar if desired.
Crack eggs into a bowl, whisk with a little water, and cook in a skillet with salted butter over medium to low heat until fluffy, folding them as they cook.
Assemble the sandwich with a biscuit, bacon, and eggs.
