Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 ripe bananas, mashed
  • 1/2 cup chocolate chips

Instructions

  1. 1Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. 2In a large bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. 3In another bowl, mix the granulated sugar, brown sugar, and vegetable oil until well combined.
  4. 4Add the eggs and vanilla extract to the sugar mixture and mix until smooth.
  5. 5Stir in the mashed bananas until fully incorporated.
  6. 6Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. 7Fold in the chocolate chips gently.
  8. 8Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  9. 9Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  10. 10Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
