Originating in Denmark, Danish pastry has roots in the 19th century when bakers adopted techniques from Austrian pastry-making. Traditionally enjoyed during festive occasions, these flaky pastries are often filled with sweet or savory ingredients. Today, they are beloved around the world, with countless variations reflecting local tastes and ingredients.

Coconut sugar is less processed and adds a caramel flavor.
Whisk together cold water, 1 egg, vegetable oil, salt, and lemon juice.
Add flour to the liquid ingredients and mix.
Knead the dough for up to 10 minutes.
Leave the dough to rest for 30 minutes.
Open the dough and place butter in the center.
Fold the dough over the butter and spread it with a rolling pin.
Tap to spread the dough, then collect it by folding.
Leave the dough aside for 10 minutes.
Repeat the spreading and collecting process five times.
Cut the dough into square pieces.
Make another cut in the squares to create flaps.
Spray some water on the dough.
Fold the corners of the squares to shape them.
Let the shaped dough rest in the fridge for 20 minutes.
Glaze the pastries with an egg wash or with creme patissiere and apricot marmalade.
Sprinkle chocolate chips on top.
Bake the pastries for 30 minutes at 190° C (375° F).
