Ingredients
- ●2 pounds fresh fruit (strawberries, blueberries, or peaches)
- ●1 cup granulated sugar
- ●1/4 cup lemon juice
- ●1/2 tsp vanilla extract (optional)
- ●1/2 tsp pectin (optional, for thicker jam)
Instructions
- 1Wash the fruit thoroughly and remove any stems or pits.
- 2Chop the fruit into small pieces and place them in a large pot.
- 3Add the sugar and lemon juice to the pot with the fruit.
- 4Cook the mixture over medium heat, stirring frequently until the sugar dissolves and the fruit starts to break down (about 10-15 minutes).
- 5If using, stir in the pectin and continue to cook for another 5-10 minutes until the mixture thickens.
- 6Remove the pot from heat and stir in the vanilla extract if desired.
- 7Pour the hot jam into sterilized jars, leaving about 1/4 inch of headspace at the top.
- 8Seal the jars with lids and allow them to cool to room temperature before refrigerating or processing for long-term storage.
Equipment
Ingredients
- ●2 cups all-purpose flour
- ●1/4 cup granulated sugar
- ●1/2 tsp salt
- ●1 packet (2 1/4 tsp) active dry yeast
- ●1/2 cup whole milk, warmed
- ●1/4 cup unsalted butter, melted
- ●1 large egg
- ●1 tsp vanilla extract
- ●1/2 cup cream cheese, softened
- ●1/4 cup powdered sugar
- ●1/2 tsp lemon juice
- ●1 egg (for egg wash)
Instructions
- 1In a large bowl, combine warm milk, sugar, and yeast. Let it sit for about 5 minutes until frothy.
- 2Add melted butter, egg, and vanilla extract to the yeast mixture. Mix well.
- 3Gradually add flour and salt to the mixture, stirring until a dough forms.
- 4Knead the dough on a floured surface for about 5 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
- 5Preheat the oven to 375°F (190°C).
- 6Roll out the dough on a floured surface to about 1/4 inch thick. Cut into squares or circles.
- 7In a small bowl, mix cream cheese, powdered sugar, and lemon juice until smooth.
- 8Place a dollop of the cream cheese mixture in the center of each dough piece. Fold the corners towards the center to create a mini Danish shape.
- 9Brush the tops with beaten egg for a golden finish.
- 10Bake for 15-20 minutes or until golden brown. Let cool before serving.
Equipment
Ingredients
- ●1 sheet puff pastry
- ●2 ripe peaches, sliced
- ●1/4 cup granulated sugar
- ●1 tsp vanilla extract
- ●1/2 tsp ground cinnamon
- ●1 egg, beaten (for egg wash)
- ●1 tbsp all-purpose flour (for dusting)
- ●Powdered sugar (for dusting, optional)
Instructions
- 1Preheat the oven to 400°F (200°C).
- 2Roll out the puff pastry on a lightly floured surface to smooth it out.
- 3Cut the puff pastry into a rectangle, about 10x6 inches.
- 4Place the sliced peaches in a bowl and toss them with granulated sugar, vanilla extract, and ground cinnamon.
- 5Arrange the peach mixture in the center of the puff pastry, leaving a border around the edges.
- 6Fold the edges of the pastry over the peaches, creating a border, and pinch to seal.
- 7Brush the edges of the pastry with the beaten egg to give it a golden color when baked.
- 8Transfer the pastry to a baking sheet lined with parchment paper.
- 9Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed up.
- 10Remove from the oven and let cool slightly before dusting with powdered sugar, if desired.
