Originating in Denmark, Danish pastry has roots in the 19th century when bakers adopted techniques from Austrian pastry-making. Traditionally enjoyed during festive occasions, these flaky pastries are often filled with sweet or savory ingredients. Today, they are beloved around the world, with countless variations reflecting local tastes and ingredients.

Coconut oil reduces saturated fat while still providing richness.

Fresh fruit adds natural sweetness and reduces sugar content.

Coconut sugar is less processed and adds a caramel flavor.
Put flour into a mixer with a hook attachment on slow speed.
Mix until it comes together; do not over mix.
Transfer the mixture to a plastic bowl sprayed with grease to prevent sticking.
Refrigerate the mixture overnight.
Take two blocks of 250 grams of salted butter (minimum 82% fat) and flatten them out to combine into 500 grams.
Use a rolling pin to flatten the butter so it fits in the middle of the dough.
Cover the butter with the dough and roll it out.
Add more flour to prevent sticking while rolling out the dough.
Repeat the rolling and folding process three times.
Rest the dough in the fridge for 10-15 minutes, wrapped in cling film to prevent drying out.
