Elk Pot Roast

2.5 lb elk roast
high mountain seasonings venison rub
olive oil
3-4 cloves chopped garlic
1-2 cartons beef broth
onion soup mix
peeled chopped potatoes
peeled chopped carrots
chopped onions

Preheat the oven to 310°F.

Season the elk roast with high mountain seasonings venison rub.

Heat olive oil in a 6-quart large enameled Dutch oven in the oven.

Preheat the gas grill to 650°F.

Sear the roast on the gas grill for 5 minutes on each side.

Remove the Dutch oven from the oven, add chopped garlic and oil.

Place the roast in the Dutch oven along with beef broth and onion soup mix.

Put the Dutch oven back in the oven for 2 hours.

After 2 hours, add peeled chopped potatoes, carrots, and onions to the Dutch oven.

Reduce the oven temperature to 325°F and cook for an additional hour.
