Grab a rotisserie chicken and shred about 1 breast and 1 thigh, setting it aside.

In a pan, add chicken fat (or regular oil) and sauté 1 diced yellow bell pepper and 1/2 diced white onion until soft and fragrant.

Add in 1 diced jalapeno pepper (optional) and a pinch of salt to season the aromatics.

Stir in 1 teaspoon minced garlic.

Add 1 can of roasted corn and 1 can of diced hatch green chilies to the pan and mix well.

Add 2 cans of white kidney beans and 2 cans of Northern beans to the mixture, seasoning with seasoned salt.

Pour in the whole container of chicken broth and mix everything together.

Season the mixture with 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon ground cumin, 1-2 teaspoons chili powder, 4 teaspoons black pepper, and a pinch of salt to taste.

Mix in the shredded rotisserie chicken and add 1/4 cup heavy cream (optional).

Simmer the chili for about 10 to 15 minutes, stirring occasionally.
