Beef and Vegetables Potjie
Cultural Context
Originating from South Africa, Potjie is a traditional stew cooked in a cast-iron pot over an open flame. It's a communal dish often enjoyed during family gatherings and celebrations, showcasing the rich flavors of local ingredients. Today, variations abound, with different meats and vegetables reflecting regional tastes, making it a beloved dish not just in South Africa but also in many other countries.

Heat canola oil in a Dutch oven.
Add the beef and kidney; brown the meat until seared on all sides.
Remove the meat to a bowl; add onions and brown until softened.
In a bowl, combine sweet sherry, soy sauce, dry mustard, dry rosemary, dry thyme, beef bouillon cube, and black pepper; whisk until combined.
Return the meat to the pot; add the mixture to the pot along with boiling water and stir well.
Cover with a lid and simmer for one and a half hours.
Uncover and layer in the drained apricots, carrots, sweet potatoes, potatoes, zucchini, chopped cabbage, and tomato; season with black pepper to taste.
Cover and allow to simmer for two hours or until the vegetables are done.
Uncover, dress with chopped parsley, and serve family style.
