Slow-Roasted BBQ Brisket Sliders

Today, variations of brisket sliders have gained popularity across the U.S., allowing for easy serving at parties and events, while still honoring the classic slow-cooked method.

Preheat oven to 250°F (121°C).
Trim excess fat from the brisket if necessary, then season generously with salt and black pepper.
Place the brisket in a 9x13 inch baking dish, fat cap side up.
Roast the brisket in the oven for 4 hours, approximately 1 hour per pound plus an additional half hour.
While the brisket is roasting, prepare the barbecue sauce by mixing together 2 cups of ketchup, 1 cup of water, 2 teaspoons of Worcestershire sauce, 2 tablespoons of red wine vinegar, and 1/2 cup of brown sugar in a large measuring cup.
Grate 2 cloves of garlic into the barbecue sauce mixture and whisk until combined.
After 4 hours, remove the brisket from the oven and pour off excess liquid and fat.
Increase the oven temperature to 350°F (177°C) and pour the barbecue sauce over the brisket.
Return the brisket to the oven and cook uncovered for an additional 30 minutes until the sauce is caramelized.
While the brisket is finishing, slice 2 yellow onions and caramelize them in a skillet with 2 tablespoons of butter over medium-low heat until golden brown.
Slice cheddar cheese into thin slices for the sliders.
After the brisket has finished cooking, let it rest for 15 minutes before slicing.
Transfer the brisket to a cutting board and slice into finger-thick pieces, then chop into smaller pieces.
Toss the chopped brisket with the remaining barbecue sauce until well coated.
Assemble the sliders by placing brisket on the bottom half of the slider buns, topping with caramelized onions and cheddar cheese, then placing the top half of the bun on.
Serve immediately.
