Peel and cut potatoes into desired size.
Run the potatoes through cold water a couple of times to remove excess starch.
Pat the potatoes dry on a kitchen towel.
Heat vegetable oil to 350°F for frying.
Blanch the potatoes in the oil for about 5 minutes until barely cooked through.
Remove the blanched fries and let them drain.
Reheat the masala fried sauce.
Carefully drop the fries back into the hot oil and fry until golden brown and crispy.
Remove the fries to a bowl lined with parchment paper.
Immediately season the fries with salt and toss in the masala fried sauce along with cilantro and scallion.
