1

Preheat the sufuria (pan).

2

Add 1 tablespoon of cooking oil to the sufuria and swirl it around.

3

Add 1 tablespoon of curry powder and cook for about a minute.

4

Add onions and cook until they turn translucent, avoiding browning.

5

Add the paste and mix it in, cooking for about 30 seconds.

6

Add tomatoes and lower the heat, then add beef cubes and stir to mix.

7

Cover and leave to simmer for about 5 minutes until tomatoes soften.

8

Add garam masala and mix it in, ensuring the sauce doesn't become too dry.

9

Slice potatoes thinly for faster crisping.

10

Heat oil and add the potatoes, cooking until halfway or 3/4 done.

11

Remove potatoes from the oil, let it heat up again, then return fries to crisp up.

12

Once browned and crispy, transfer fries to the sufuria with the sauce.

13

Add fresh cilantro and mix gently to avoid breaking the fries.

14

Finish by squeezing fresh lemon juice over the dish before serving.
