Add the potato halves to the bowl and toss until evenly coated with the spice mixture.

Spread the potatoes in a single layer on a baking sheet.

Roast in the preheated oven until crispy and cooked through.

Remove from the oven and sprinkle with lemon juice and mint leaves before serving.
