Preheat the oven to 350°F (175°C).
Prepare a baking dish by placing it in a larger pan filled with water to create a water bath.
In a saucepan, heat sugar over medium heat until it melts and turns golden brown, about 5-7 minutes.
Quickly pour the caramel into the bottom of the baking dish, tilting to coat evenly.
In a mixing bowl, whisk together eggs, sweetened condensed milk, evaporated milk, vanilla extract, cinnamon, and salt until smooth.
Pour the egg mixture over the caramel in the baking dish.
Cover the baking dish with aluminum foil to prevent browning.
Bake in the preheated oven for about 50-60 minutes, or until set and a knife inserted comes out clean.
Remove from the oven and let cool to room temperature.
Refrigerate for at least 4 hours or overnight to set completely.
To serve, run a knife around the edges and invert onto a plate.
