2 stalks lemongrass
3 cloves garlic
1 teaspoon turmeric
1 tablespoon ginger
1 cup coconut milk
8 oz rice noodles
1 cup cooked rice
5 kaffir lime leaves
1 stick cinnamon
1 teaspoon allspice
1 teaspoon cardamom
1 teaspoon cloves
1/4 cup coriander
1 teaspoon cumin
1 teaspoon peppercorns
1 teaspoon salt
2 tablespoons coconut oil
2 tablespoons vinegar
1 onion
2 worry peppers

Trim off the lemongrass and peel the outer layers to get the tender part.

Smash the lemongrass to release its flavor.

Rinse the chicken with vinegar and cut it into two pieces.

Add 6 cups of water to a pot with lime leaves, cinnamon, lemongrass, and allspice.

Add the chicken to the pot and let it steam for about 15 minutes.

Prepare dry ingredients by pulverizing peppercorns, cumin, coriander, cardamom, and cloves.

Chop half an onion finely.

Smash and mince 4 cloves of garlic.

Slice and mince fresh turmeric.

Slice and chop a thumb-sized piece of ginger.

Remove the chicken from the pot and strain the liquid.
