Sauté chopped onion and minced garlic in olive oil with bay leaves.

Add hot water to cover the chicken, cover again, and let simmer for another 20 minutes. Add more boiling water to achieve about three and a half times the volume of rice. Adjust salt if necessary, and once it returns to a boil, add the rice. Stir and cover.

After 13 minutes, add the blood mixed with vinegar. Mix well and let boil for another 1 to 2 minutes.
