100 grams Magnetout or Broad beans
1 red bell pepper, cut into cubes
1 tablespoon vegetable oil
200 grams tofu, cut into cubes (approx. 25 grams each)
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1/2 teaspoon turmeric powder
1 teaspoon ginger garlic paste
1 tablespoon white part of spring onion
1 teaspoon chopped green chillies
1 tablespoon coriander leaves
2 teaspoons lemon juice
1/2 teaspoon lemon zest
1 teaspoon dark soy sauce
2 teaspoons cooking oil
1 medium onion, cut into thin slices
salt, to taste
1 teaspoon sugar (optional)
200 ml coconut milk
1 cup water
chopped spring onion leaves for garnish

Heat 1/2 teaspoon of oil in a cooking pan.

Add 100 grams of Magnetout or Broad beans and 1 red bell pepper cut into cubes; fry for 2 minutes until lightly charred, then remove from the pan.

In the same pan, heat 1 tablespoon of oil and fry 200 grams of tofu cubes until brown on both sides, then remove from the pan.

Dry roast 1 teaspoon each of cumin seeds and coriander seeds in the same pan until aromatic, being careful not to burn them.

Add 1/2 teaspoon of turmeric powder to the roasted spices and roast for just 2 seconds.

In a grinder, combine 1 teaspoon of ginger garlic paste, 1 tablespoon of the white part of spring onion, 1 teaspoon of chopped green chillies, 1 tablespoon of coriander leaves, the dry roasted spices, 2 teaspoons of lemon juice, 1/2 teaspoon of lemon zest, 1 teaspoon of dark soy sauce, and 2 teaspoons of cooking oil; grind into a smooth paste.

Heat 1 tablespoon of cooking oil in a pan and fry 1 medium-sized onion, cut into thin slices, adding salt to taste until the onion is light brown.

Add the prepared Raisukaree spice paste to the onions and fry until oil starts to separate from the masala.

Add 200 ml of coconut milk and 1 cup of water, mixing everything together and allowing the sauce to come to a full boil.

Add the fried tofu cubes to the boiling sauce, cover with a lid, and cook for a few minutes to let the tofu soak up the sauce.

Open the lid and add the fried vegetables, stirring them into the curry; check the salt and adjust if necessary.

Cover the pan again and cook until the vegetables are cooked but still retain their crunch.

Garnish the Tofu Raisukaree with chopped spring onion leaves before serving.
