Clean eggplant under warm water. Peel and cut eggplant into small pieces. Place in a separate pot. Add 1 1/2 - 2 cups of water. Add water crest, spinach, cabbage, tomato sauce, Haitian seasoning (epis), and extra virgin olive oil. Cover it and let it cook for 10-15 minutes.

Place carrots in a separate pan, add butter or extra olive oil and let cook for 5-10 minutes.

Combine carrots into pot with eggplant and mash all ingredients together.
