1 pound ground beef

3/4 cup shredded carrots
3/4 cup diced celery

3 cups chicken broth
4 cups diced peeled potatoes

1/4 cup flour
1 1/2 cups milk
2 cups (16 oz. box) Velveeta, cubed
3/4 teaspoon salt
1/2 teaspoon pepper
1/4 cup sour cream
1/2 pound cooked, crumbled bacon

Cook and crumble the bacon; set aside.

Brown the ground beef; drain and set aside.

In a large stock pot or Dutch Oven, sauté the onion, carrots, celery, basil, and parsley in 1 Tablespoon of butter until the vegetables are tender, about 10 minutes.

Add the cooked ground beef, chicken broth, and potatoes and bring to a boil.

Reduce heat, cover and simmer for about 12 minutes or until the potatoes are tender.

Meanwhile, using a small saucepan or skillet, make a béchamel sauce by melting the remaining 3 Tablespoons of butter and then adding the flour and cook and stir until it is bubbly.

Add about half of the milk, whisk well until incorporated and starting to thicken, add the rest of the milk and cook and stir just until it is creamy and thick.

Add the béchamel sauce to the soup mixture and bring to a boil.

Cook and stir for about 2 minutes and then reduce the heat to low.

Add the cubed Velveeta chunks and salt and pepper.

Cook and stir just until the cheese is melted.

Remove from the heat and stir in the sour cream.

Add cooked bacon, if desired, or serve it on the side.
